I DID SOMETHING OTHER THAN BROWSING THROUGH PINTEREST

I ACTUALLY DO GET STUFF DONE BESIDES CRUISING PINTEREST ALL DAY!
(I know, hard to believe isn't it?)

I was blessed with the opportunity to buy 40 lbs. of frozen skinless chicken tenders for a very good price of .63 lb. just before Christmas but just now got around to unthawing it so I could can it.  Canning chicken, or any meat for that matter, isn't hard to do but it can be time consuming.  Each batch (9 pints) takes 70 minutes to pressure cook which isn't that bad but you have to watch the pressure guage and make sure it maintains 10#s of pressure for the full hour and 10 minutes.  I ended up with 38 pints of chicken

My next adventure is to fill 34 quart jars with soup, stew and beans.
I actually enjoy canning but with all the produce that comes on in the summer and fall it can get quite tiring so I like to can up other things that aren't seasonal during the winter.   There is something quite satisfying about filling jars with food that I know what goes into it, no chemicals or unwanted ingredients that I can't even pronounce.

Now I think I will go browse around Pinterest ;o)

WOW!! Productive and thrifty!! Great job. I love putting food up for future use by my family. With things the way they are in the world it is a good idea to have our houses in order.

I love seeing canning projects! Totally inspirational.

I did this canned soup last Fall. Absolutely YUM! I cheated and did frozen veggies for everything.

Good for you Connie. Putting up canned food gives a great feeling of accomplishment. I don't can, but my grandmother canned everything! There was never a lack of food on her watch. ;O)
